BREWERS NOTES:
Fresh out of the barrel we have our first oak-aged wild ale! Aged in barrels for over a year with brettanomyces, lactobacillus & pediococcus, this is a true mixed fermentation sour ale. We conditioned it on vanilla beans for a week prior to transferring it to kegs. It contains a multi-dimensional acidity that only a mixed fermentation can truly achieve – notes of raspberry, dark cherries and vanilla with a smooth, slightly dry finish.
